Ever heard of orange wines, a.k.a. skin-contact? Well, qvevri is one of the best ways to make them: proven by millennia of Georgian winemaking. Qvevri are large clay amphorae. In Georgia, they are burried underground in big cellars, 'marani'. To make wine, qvevri are filled with pressed grape juice, skins, seeds and sometimes parts of the stems. All of this is left to ferment for months. With no additives used, these are natural wines to the core. In addition to orange wines, some stunning reds and sometimes whites are also made in qvevri.
